Winemaking: whole-bunch/skin contact fermentation gives the wine its colour and tannic frame; fermentation and maturation focused on preserving aromatics—minimal intervention, gentle extraction and careful use of sulphur. Vineyard: fruit is sourced from selected sites in New Zealand chosen for balanced ripeness and good drainage; cooler maritime influences help retain bright acidity while allowing phenolic ripeness.
